Grilled Chicken & Caramelized Onion Flatbread with Blue Cheese
Happy Friday everyone! It's Diving Into Decadence here at The Slow Roasted Italian. Trying to keep up eating a healthy diet and not splurging, we have starting having a pizza night every week. We choose our ingredients and enjoy! It is so much fun and really nice that I can make whatever I want, without Mr Pickypants having a say. So, for my first pizza I chose one with ingredients that you would never find on Mr. W's pizza... Blue cheese and caramelized onion. Oh my heavens it is incredible.
Hope you enjoy! I certainly did. This was another dish that was so good I had to eat it for breakfast, I could wait for lunch.
Recipe adapted from I can't Believe It's Not Fattening by Devin Alexander pg. 77
Grilled Chicken & Caramelized Onion Flatbread with Blue Cheese
1 10 ounce Freschetta Pizza Crust
Olive oil spray (from a spray bottle, not a store bought, prefilled one that contains propellant; I used a Misto)
8 ounces Essential Grilled Chicken
1 recipe Easier Than Caramelized Onions
1 teaspoon dried rosemary
1 1/2 ounces (about 1/3 cup reduced fat blue cheese crumbles)
Preheat a grill (if using gas or charcoal to medium, I used a tabletop). Lightly mist the bottom of the crust with spray. Place the crust on a metal pizza peel or cookie sheet without a lip.
Top the crust evenly with the chicken, then onions, rosemary, and blue cheese.
Carefully slide the pizza onto the grill. Grill it until the cheese melts and the dough is crisped but not burned, 3 to 5 minutes. Carefully slide it back onto the peel or cookie sheet (using tongs) and let it stand 5 minutes. Slice the pizza into 8 slices and serve immediately.

although i dont really fancy blue cheese, your photo is making me hungry here!
